Quick and Tasty Coleslaw | Let's Cook!

Here's a recipe that I created recently to go with a pasta dinner.  I consider myself a natural cook even though I did attend Culinary Arts School.  Low sodium recipes especially appeal to me.  The following one fits the bill.  Enjoy!


• ½ head cabbage

• 1 carrot, peeled

• ½ cup mayonnaise

• ¼ cup orange marmalade

• 2 tablespoons pineapple juice


Shred cabbage and carrot into serving bowl. Mix mayonnaise, marmalade and pineapple juice together in a measuring cup. Pour dressing over cabbage/carrot mixture and toss until well combin...
