Dungeness Crab Cakes | Let's Cook!

When it comes to crab cakes, Ivar's has a simple goal: they should taste like the sweet, flaky Dungeness crab that gives them their name. With that in mind, we add only enough other stuff to hold the crab cakes together. Serve them as is, with a squeeze of fresh lemon or tartar sauce. Don't use them as hockey pucks – they're not strong enough to stay together on the ice. Serves 6.
• 1 large egg
• 1/3 cup mayonnaise
• 2 tablespoons finely chopped scallion
• 2 tablespoons finely chopped red bell pepper
• 2 teaspoons freshly squeezed lemon juice (Meyer preferred)
