Let's Cook!: Summer's Best Salad – Sweet, salty, tangy and hot!

This recipe was a hit from day one! It is very easy to make, refreshing, savory and sweet. Enjoy it with your favorite barbecue or all by itself. It is delightful – Bon appetit!


1 cup olive oil

2 tbs fresh lime juice

2 tbs champagne vinegar

2 tsp chopped fresh thyme

1 small shallot, minced

1 serrano chili pepper, stemmed and sliced into small ½" rounds

Salt to taste

1 small seedless watermelon

1/3 lb wedge feta cheese, sliced 1/8" thick

1 bunch of fresh arugula

Serrano chili pepper, sliced, for garnish
